Money Saving Mommas- Easy, Healthy Recipes

I’m back again this month with 2 recipes my family eats regularly. In order to save money, I’ve cut out buying pre-made mixes like Bisquick and some packaged snacks. (Not too mention making homemade mixes and snacks are much healthier too!)

Here are some easy recipes for you and your family! Freeze and save leftovers!

INGREDIENTS

2 large eggs
1 ¾ cups milk (I have used everything from skim milk to thick buttermilk…so whatever you have on hand should work)
¼ cup oil (I used coconut oil)
1 tablespoon honey
½ teaspoon ground cinnamon
¼ teaspoon baking soda
1 ½ cups whole-wheat flour
2 teaspoons baking powder
⅛ teaspoon salt
Warmed 100% pure maple syrup for serving
Fresh fruit for serving
INSTRUCTIONS
Preheat your waffle iron.
In a large mixing bowl whisk together the eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
Add in the flour, baking powder, and salt and whisk together just until the large lumps disappear.
When the waffle iron is hot, dab it with a little butter and then ladle some batter onto the center of the iron. Follow the instructions that came with your waffle maker to know how long it should be cooked (mine takes about 3 – 4 minutes each).
Keep waffles warm until you finish cooking all of them. Top with pure maple syrup and fruit. Enjoy!
GRAHAM CRACKERS (from Little Birdie Secrets)

Homemade Graham Crackers

INGREDIENTS:

2 cups whole wheat flour
1 tsp cinnamon (I’ve used pumpkin pie spice seasoning during Holiday season)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup butter, melted
1/2 cup honey
DIRECTIONS:

  1. Mix dry ingredients together and set aside.
  2. In a separate bowl mix together the melted butter and the honey.
  3. Add honey/butter mixture to dry ingredients, stir until combined.
  4. Drop mixture onto cookie sheet and roll out, making sure the edges reach the sides of the cookie sheet.
  5. Bake for 8-10 minutes at 400 degrees, cut quickly once out of the oven.
